Easy Thirty Minute Quesadillas

How do you like your chicken quesadillas? The recipe we’ll be highlighting below will show you how to prepare some smoky ones in under thirty minutes. These are perfect when you need to prepare a quick meal and time is limited.

  • Eight ounces of grated, smoked cheddar cheese
  • Two cups of frozen chicken strips
  • Four tortillas (ten inches)
  • At least one and a half tablespoons of olive oil
  • A 1/8 teaspoon of pepper
  • Pair of minced garlic cloves
  • Optional ingredients: chipotle salsa and sour cream

Grab a nonstick saute pan and coat it with nonstick cooking spray while using medium heat. Add the chicken and then cook for about six minutes until it’s heated through and it has browned slightly. Add the oil to the pan and stir the garlic in, cooking for a minute or two. Use pepper for seasoning. Remove the chicken from the pan and put it aside for now.

Turn up the heat on your oven to 450 degrees Fahrenheit. Line a pair of baking sheets with nonstick foil and then place a tortilla on each of the sheets you just prepared. Add a fourth of the cheese to the tortillas and then add a layer of half of the chicken. Spread the remaining cheese evenly between each of the tortillas Cover with the last tortillas and use olive oil to lightly brush them. Bake for seven minutes or until the tortillas turn golden brown and the cheese melts.

Cut the tortillas into six wedges and serve if with the chipotle salsa and sour cream if you chose to use them.

With the 2019-2020 school year having already commenced, you may be thinking about different foods you can make to use as lunch snacks. This turkey club tortilla roll-up recipe can make nearly fifty servings and can be done in under an hour. Let’s get started.

  • Half a cup of either mayonnaise or salad dressing
  • Six lettuce leaves
  • Four ounces of softened cream cheese
  • Half a pound of cooked, thinly sliced turkey
  • Half a cup of drained and chopped pepperoncini
  • Half a cup of chopped tomato
  • Pair of tablespoons of fresh, chopped cilantro
  • Six flour tortillas (eight inches)
  • Four slices of crumbled, crisply cooked bacon

Use a small bowl to mix the cream cheese and mayonnaise until it’s smooth. Stir in the pepperoncini as well as the bacon and cilantro. Warm up the tortillas.

Using the mayo mixture you just made, spread about two tablespoons of it across each tortilla and then top with a rounded tablespoon of tomato, a slice of turkey, and a leaf of lettuce. Roll each tortilla up tightly and then cut them into pieces of eight, using a toothpick to keep the ingredients secure. Either serve immediately or cover them up tightly and refrigerate until it’s time to serve.

If you’re a Mexican cuisine fan then you probably enjoy the taste of a tortilla. Have you ever wondered whether corn or flour tortillas are the best choice? While many of us pay attention to the tortilla fillings like how much cheese, beans or cream is used, we often fail to take into account whether corn or flour is the best way to go.

Let’s kick things off with flour tortillas. True to their name, these tortillas use white flour which packs plenty of protein. These tortillas tend to be larger than their corn cousins, allowing you to add more ingredients to the filling. Flour is also rich in iron as well as in calcium, the latter helping keep the bones strong and healthy.

A Closer Look at Nixtamal

You may have come across the term “nixtamal”, but have you ever been curious as to its origins or how it relates tortillas? The word has a deep history going back to the Aztecs and it was meant to detail the procedure which uses partly cooked and lime-soaked corn. The Aztecs would explore riverbeds in search of limestone rock which was used as a corn grinder of sorts. This process would eventually come to be known as nixtamalization.

Nixtamal can be ground into masa to make foods like tortillas, tamales, or finely ground patted discs. The Spanish word ‘masa’ is the name given to describe the corn dough. Nixtamal also provides flexibility since it can be kept in its full form to make pozole, perhaps better known as hominy.

The many benefits reaped by nixtamal were discovered by the Aztecs using a tried and true approach: experimenting with it. They quickly noticed it served as an energy source and may have enhanced their spiritual alertness without negatively affecting the digestive system. As science has evolved exponentially since the days of the Aztecs, the amino acid niacin found in nixtamal may be beneficial in the reduction of bad cholesterol, getting rid of toxins, and cell repair.

Easy Chicken Enchiladas

Today, it’s all about green chile chicken enchiladas, a great way to welcome the arrival of Humpday. Here we go!

  • Chopped cilantro
  • A cup of your favorite tomatillo salsa
  • Sliced onion
  • A cup of your favorite green enchilada sauce
  • Sliced radishes
  • A small can of diced, roasted green chiles
  • Crumbled queso fresco
  • A ¼ cup of heavy cream
  • Two cups of Monterey Jack cheese
  • Vegetable oil
  • Two cups of shredded rotisserie chicken
  • Eight corn tortillas

Begin by placing the green chiles, tomatillo salsa, heavy cream, and enchilada sauce in a blender and then mixing until the ingredients turn into a smooth sauce. Set it aside for the time being.

Using a frying pan over high heat, pour sufficient vegetable oil so that the corn tortillas can be submerged, it should be roughly half an inch. Once the oil is hot enough, use tongs to dip the tortillas, going one at a time. Fry them until they become pliable and sturdy. Carefully shake them to get rid of excess oil and then place in a shallow dish. Repeat the process for the remaining tortillas.

Grab a small handful of chicken and Monterey Jack cheese and place them at one end of the tortilla before rolling it up and then placing the tortilla with its seam side down in a baking dish. Repeat for the rest of the tortillas. Pour some sauce over the enchiladas and then cover them with whatever Jack cheese you have left.

Place the baking dish in an oven, turn up the heat to 350 degrees, and bake until the cheese has bubbled and turns brown. Use the ingredients above for garnish and serve hot.
