Easy Snacks for School Lunches

With the 2019-2020 school year having already commenced, you may be thinking about different foods you can make to use as lunch snacks. This turkey club tortilla roll-up recipe can make nearly fifty servings and can be done in under an hour. Let’s get started.

  • Half a cup of either mayonnaise or salad dressing
  • Six lettuce leaves
  • Four ounces of softened cream cheese
  • Half a pound of cooked, thinly sliced turkey
  • Half a cup of drained and chopped pepperoncini
  • Half a cup of chopped tomato
  • Pair of tablespoons of fresh, chopped cilantro
  • Six flour tortillas (eight inches)
  • Four slices of crumbled, crisply cooked bacon

Use a small bowl to mix the cream cheese and mayonnaise until it’s smooth. Stir in the pepperoncini as well as the bacon and cilantro. Warm up the tortillas.

Using the mayo mixture you just made, spread about two tablespoons of it across each tortilla and then top with a rounded tablespoon of tomato, a slice of turkey, and a leaf of lettuce. Roll each tortilla up tightly and then cut them into pieces of eight, using a toothpick to keep the ingredients secure. Either serve immediately or cover them up tightly and refrigerate until it’s time to serve.

Summer Chicken Fajitas

Much like a burrito, fajitas hold a near-universal appeal. Throw in some meat like chicken and you’ve got a great summer recipe. The recipe below will show you how to do just that with enough portions for four to six people. Here we go!

  • Sour cream or Cashew Cream mix
  • A pound of skinless and boneless chicken breast halves cut into slices of a ½-inch thick.
  • Six warmed flour tortillas
  • A pair of stemmed, thinly sliced and seeded green bell peppers
  • A teaspoon of salt
  • A medium, thinly sliced red onion
  • Tablespoon of chili powder
  • Pair of coarsely chopped garlic cloves
  • Pair of tablespoons of Red Wine Vinaigrette (may also use vegetable oil)

Begin by preheating your oven to 400 degrees and then toss the vinaigrette, salt, peppers, chili powder, chicken, garlic, and onion together in a large mixing bowl until everything is evenly coated. Use a rimmed, large baking sheet to spread and then bake for about 25 minutes or so or until the veggies become tender and the chicken is cooked through. Make sure to stir halfway through the cooking process.

When only five minutes remain in baking, use aluminum foil to wrap the tortillas and place them in an oven until they are warmed through. You may also wrap the tortilla stack in a damp paper towel and microwave them on high for a minute.

Evenly distribute the fajita mixture among the warmed tortillas and serve along with the sour cream.

Have Some Morning Chilaquiles

A food we’ve mentioned before is chilaquiles, a great breakfast for those that are fans of fried tortillas drenched in salsa. In case you forgot about them, here’s a recipe we found.

  • Either coriander or cilantro leaves for garnish
  • Four tablespoons of vegetable oil
  • Half of a sliced avocado (optional)
  • Eight quartered corn tortillas
  • Half of a diced, small onion
  • A cup of either salsa verde or roja
  • Pair of tablespoons of crumbled Cotija cheese
  • Pair of eggs
  • Four tablespoons of crema
  • Freshly ground pepper and salt

Using a large frying pan, heat pair of tablespoons of the oil using medium-high heat. In batches, add the quartered tortillas and fry until the chips turn golden on each side, it should take a minute or so. Move the chips over to a paper towel so they can drain.

Using a saucepan over medium heat, add a tablespoon of the oil and then add the salsa, cooking enough so that it warms through. Follow by adding the chips and stir so that the salsa coats the chips.

While this is going on, use a small frying pan to heat the last tablespoon of oil. Crack the eggs in and season them with pepper and salt. Cook for a minute and then turn down the heat to low. Continue to cook for another two minutes or so until the white has set and the edges appear crispy and gold. During the final thirty seconds of cooking, baste the egg white with a spoon using the hot oil to so that the white finishes cooking. Move the fried eggs over to a plate with a spatula.

After serving, top the chilaquiles with the cheese, cilantro, crema, and avocado if you chose to use it.

    A Tuna Spin for Your Next Taco

    Tuna and poke probably aren’t two ingredients you would expect to make sense together, and yet this taco recipe would suggest otherwise. Let’s take a look at what you’ll need.

    • Pair of six-ounce, inch-thick tuna steaks
    • Horseradish cream
    • Seafood spice (whichever brand you prefer)
    • Chile-Mayo
    • Oil for cooking
    • A spiralized cucumber cut into thin half-moon shapes
    • Corn tortillas
    • A diced mango
    • Spring mix or romaine lettuce blend
    • A diced avocado

    After patting dry the fish with a paper towel, use the seafood spice blend to dust the steaks. Use a large skillet over medium-high heat to heat the oil. Once the oil has started to simmer, sear both sides of the steak for about minute or two on each side.

    Move the seared ahi over to a large cutting board and allow it cool for about ten minutes. Use a sharp knife to make a thin slice across the grain.

    Warm up the tortillas and then divide the tuna evenly among them. Use the spring mix to top each taco along with the mango, cucumber, and avocado. Follow by drizzling with the horseradish cream and chile-mayo and you’re ready to serve.

    Easy Meat and Veggie Tortillas

    There are those of us that eat meat, those of us that stick to a strict vegan or vegetarian life, and then there are those that fall somewhere in the middle and can appreciate meat or vegetables in equal amounts. Regardless of your dietary preferences, these bacon veggie tortilla roll-ups will hit just the right spot this weekend. Here is what you’ll need.

    • About six flour tortillas (ten-inches)
    • Sixteen ounces of sour cream
    • A pound of cut up, fried and dried bacon
    • Eight ounces of room temperature cream cheese
    • A ¼ cup of either habanera or hot pepper cheese
    • Hidden Valley Ranch Dip Mix (one pack)
    • A ¾ cup of sharp cheddar cheese
    • Cup of fine, chopped cauliflower
    • A trio of tablespoons of minced, fresh parsley
    • Cup of fine, chopped broccoli
    • Pair of tablespoons of minced green onion
    • Cup of chopped matchstick carrots

    Use an electric mixer in a large mixing bowl to turn the cream cheese into a creamier texture until it becomes smooth. Follow by adding the sour cream, mixing, and then adding the dip mix and blending it all together. Using the order shown above, fold each of the ingredients into the creamed mixture.

    Use about a heaping half cup of the mixture and place it into the center of the tortilla. Spread it within a half-inch of the edge of each tortilla and then roll each one up tightly. Wrap them individually in plastic and refrigerate them before slicing them into one-inch pieces and serving.

    Soup + Tortilla = Delicious

    You might think that tortillas and soup don’t go together, but they can. If you want to try using your tortillas in a new and fun way, try this creative recipe! This nice, smoky chicken soup is made much better with tortillas. We found this great tortilla soup recipe here: https://www.epicurious.com/recipes/food/views/tortilla-soup-388718.

    Ingredients

    • 1 4-pound chicken
    • 1 onion, quartered
    • 1 carrot, peeled, chopped
    • 5 garlic cloves, smashed
    • 2 dried chipotle chiles
    • 1 jalapeño (with seeds), halved lengthwise
    • 7 cilantro sprigs
    • 3 tablespoons (or more) fresh lime juice
    • Kosher salt and freshly ground black pepper
    • Vegetable oil (for frying)
    • 5 corn tortillas, cut in 1/2″-thick strips
    • 2 ears of husked corn, or 2 cups frozen, thawed corn kernels
    • Chopped fresh cilantro, halved cherry tomatoes, avocado wedges, queso fresco or mild feta

     

    Special Equipment

    • Deep-fry thermometer

    Boil the chicken, onion, carrot, garlic, chipotles, jalapeno, and 16 cups of water together, then skim the foam from the top. Simmer for an hour until the chicken is cooked through. Once the chicken is done, shred the chicken meat and set aside. Strain the broth and add more chiles if you want a spicier flavor. Simmer the broth for about an hour, then stir in 3 teaspoons of lime juice and season with salt and pepper. Put the chicken back in.

    Next, pour vegetable oil in a skillet until the oil is one inch deep. Heat it up until your deep fry thermometer says 350 or 360 degrees Fahrenheit. Fry the tortilla strips for about 2-3 minutes each. Drain them and season with salt.

    Cook the corn with a gas flame or under a broiler until it is charred in spots. Cut kernels and discard the cobs. If you don’t have corn on the cob, then cook the kernels in a skillet until it’s charred in spots.

    Rewarm the soup, and top it with corn, tortilla strips, cilantro, avocado, tomatoes, and crumbled queso fresco.

    An Unconventional Tortilla Recipe

    If you’ve ever wanted to get creative with your tortillas, then this is the perfect recipe to try out. You can make these sugary dessert nachos quickly, and they’ll be a perfect snack no matter what occasion it is.

    Ingredients

    • 3/4 c. sugar
    • 4 tsp cinnamon
    • 8 tortillas
    • 6 Tbsp butter melted
    • 8 tsp Cinnamon Sugar
    • 1 c. strawberries chopped
    • 1 banana sliced
    • 1 c. ice cream
    • 2 Tbsp chocolate syrup
    • 2 Tbsp caramel ice cream topping

    Instructions

    1. Preheat oven to 350 degrees.
    2. Lightly brush one side of each tortilla with melted butter. Sprinkle 1 tsp of cinnamon sugar over each tortilla. Use pizza cutter to cut each tortilla into wedges. Place on ungreased cookie sheet sugar side up. Bake 10-12 minutes or until puffed up and just turning golden brown. Remove from oven and let cool.
    3. Arrange cooled cinnamon chips on a plate. Top with ice cream, strawberries, banana, chocolate syrup and caramel ice cream topping.

    Super Simple Thirty Minute Casserole

    For this last week of June, we’re bidding it adieu with a baked tortilla casserole recipe that uses fewer than ten ingredients. It’s easy, it’s delicious, and it’s another thing to add to your life of options the next time you’re figuring out what to make.

    • A pound of lean hamburger
    • An eight-ounce package of shredded yellow cheese
    • Can of mushroom soup
    • A can of refried, low-fat beans
    • Sixteen-ounce container of sour cream (either fat-free or low fat)
    • A chopped, green pepper
    • Ten flour tortillas
    • A chopped, medium onion
    • An eight-ounce jar of salsa

    Begin by mixing the sour cream and soup and then spreading half of it over a 9×13 inch pan. Cook the hamburger, degrease it and then add the beans, salsa, peppers, and onion. Grab a tortilla and fill it with the burger mixture you just made before placing in a baking dish over the soup and sour cream mixture you made earlier. Cover with any mixture of the soup you have and then top with the cheese you chose.

    Cover up the mixture and bake it at 350 degrees for about thirty minutes. It’s that easy!
