With Thanksgiving around the corner, there is nothing better than a reminder of the delicious comfort foods that are associated with fall and cooler weather. One of the most recognizable foods is mashed potatoes. Fusions of different types of food is really popular among new and upcoming restaurants. Instead of doing the simple mashed potato with gravy, spice it up and put it in a quesadilla. The ingredients for this dish include:
- 2 cups of mashed potatoes
- 6 slices cooked bacon, crumbled
- ¼ cup sliced green onions
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 2 tablespoons softened butter
- ¼ cup sour cream
Stir together the mashed potatoes, bacon, and green onions. Spread the mashed potato mixture onto one side of half of the tortillas. Sprinkle the cheddar cheese on top of the mashed potato and put it on top the remaining tortilla. Sparingly apply butter to each side of the quesadilla.
Preheat a large skillet over medium heat. Place the quesadilla into the preheated pan, and cook until golden brown. Flip it over and continue cooking until golden brown. This should take 2-3 minutes per side. Repeat with remaining quesadillas. Serve with cranberry sauce, salsa or sour cream.
