
It’s the weekend and many of us don’t want to spend too much of our time cooking when we’d rather be relaxing before returning to the daily weekday grind. With that in mind, these avocado and jack quesadilla triangles will satisfy every one of all ages and you won’t have to spend too much time in the kitchen to make them.
- Crushed flakes of red pepper or smoked paprika (optional)
- A medium halved and pitted ripe avocado
- A cup of shredded Monterey Jack cheese
- A ¼ teaspoon of salt
- Four flour tortillas
- Fresh chopped cilantro or chives (optional)
Begin by scooping the avocado pulp into a small bowl and then mash it roughly using a spoon. Use the cilantro and salt for seasoning if you chose to use it.
Use a nonstick griddle over medium heat until you’re able to immediately evaporate a drop of water. Add a pair of tortillas in a single layer and then top with half a cup of cheese, making sure to spread it around so that there is only half an inch between the cheese and the edge. Use the pepper flakes to sprinkle if you decided to use them and then add another tortilla. Once the bottom tortilla has become hot and turned golden in about a minute, flip it over and heat the other side for thirty seconds or so.
Move the tortillas over to a cutting board and cut them into six wedges. Serve with the mashed avocado and enjoy!
