Try Some Gorditas Today

gorditaInfladaOver in Veracruz, one of the most popular methods of eating tortillas is by “inflating” them. Commonly referred to as “gorditas”, the food is comprised of corn masa dough and at least one other ingredient that involves starch such as mashed plantain or mashed beans. Typically gorditas range between savory and sweet, but one trait they all share in common is their tendency to puff up when they’re being cooked. Contrary to what you might think, it’s not hard to become skilled at preparing a “gordita inflada”. Here’s what you’ll need:

  • Vegetable oil to fry the gordita
  • A large and ripe plantain (one quarter) cut and peeled into ¼-inch slices
  • A half teaspoon of salt
  • A quarter cup of milk and all-purpose flour
  • A pound of of fresh masa

Begin by blending the plantain along with the milk in a blender. Using a separate mixing bowl of medium size, mix in the puree with the masa, the flour, and the salt and then work it into a dough using your hands. If necessary, add some more flour, about half a tablespoon at a time until the dough is smooth, firm, but pliable. Taste it for salt and add some more if you feel it’s necessary.

Separate the dough into twelve ping-pong sized balls and keep them covered with a damp cloth while you continue preparing. Once ready, press each ball into a five-inch round and place them on a wax paper-lined baking sheet.

Heat the oil to about 375 degrees Fahrenheit or until a piece of dough begins to sizzle upon contact, also make sure to have a spatula or large cooking spoon ready. Place the balls or gorditas into the oil and flick spoonfuls of oil over them to make sure they evenly puff. Do this for about 20 seconds or so before turning them over and then continue for another 10 to 15 seconds.

Remove the gorditas and allow the oil to drain. Though inflation times will vary, you’ll enjoy them the most when they’re fresh out of the pan and still nice and hot.

A Better, Healthier Burrito

burrito (1)Burritos are a food enjoyed by many, but they aren’t generally viewed as being the healthiest food choices nor are they a viable option for those that choose to stick to a vegetarian diet.  Thankfully, there is such a thing as a better burrito that’s healthier than the ones typically served at fast food restaurants. Instead of ground meat, choose some chopped walnuts and mushrooms for the filling and throw in some spices.  Wrap the ingredients in a tasty tortilla, throw in some guacamole and you’ve got all of the burrito essentials presented in a healthier way.  Here’s what you’ll need:

  • Cut, washed, and dried kale leaves
  • A tablespoon of neutral tasting oil
  • One guacamole or mashed avocado
  • A cup of finely chopped cremini mushrooms
  • About four to six flour tortillas
  • A ¾ cup of raw minced walnuts
  • One and a half cup of kidney beans, pinto beans, or cooked black beans
  • A teaspoon of salt
  • A teaspoon of ground cumin
  • Half a cup of chopped white onion
  • One and a half teaspoon of ground chili

Begin by adding the oil and onion to a skillet over medium heat and wait until the onion turns translucent, being careful not to burn it.  Add the cremini mushrooms and the walnuts and continue to stir while adding the salt, cumin, and chili.  Continue to cook the ingredients until they’re fragrant and then add the beans.

For the burrito preparation, use a griddle or skillet to lightly heat the tortillas as you want them to remain flexible.  One they’re ready, grab a tablespoon or two of the mushroom and walnut mix and add it in the middle of the tortilla.  Add a tablespoon of avocado to one side of the mix and the kale pieces to the other side.  Roll over the tortilla over the ingredients, slice in the middle, and you’re ready to serve!

tortillaPizza (1)If there’s one food that just about everyone can agree they like, it’s pizza.  A staple during sports-themed parties, kid parties, or a quick social gathering, pizza’s appeal is widespread and with its many different toppings, there are boundless ways to eat one.  However, has the thought of a tortilla pizza ever crossed your mind?  It only needs a single pan, the ingredients are easy to find, you can put just about any topping you can think of, and it’s even flexible enough to be used as a camping meal.  The ingredients are largely pizza standards:

  • Tortillas
  • Toppings (i.e.: mushrooms, arugula, caramelized onions, eggplant)
  • Tomato or marinara sauce, or olive oil and béchamel sauce
  • Cheese (i.e.: goat cheese or a mix of mozzarella and Parmesan)

Start by finding a pan sufficiently large enough to accommodate your tortilla then sauté some vegetables or meat in olive oil and then move them over to a spare plate.  Use some sizzling butter and the olive oil to ensure that the pizza remains nice and crisp.  Put the tortilla into the pan, spread the sauce around, sprinkle the cheese, and then cover it all up with whatever toppings you chose.

Cook everything on medium heat until the pizza appears golden brown on the bottom, typically around three to four minutes.  You may also want to cover it up to help the cheese melt a little more evenly.  Slice it up and you’re ready to serve your tortilla pizza!

tacoThere are probably few people who don’t like tacos.  The traditional Mexican food remains a huge favorite here in the United States and there is lots of room to get creative with its contents.  However, a genuine taco will probably always remain tortilla, filling, and salsa.  If the taco is missing one of these essentials, it’s probably not a real taco.

Speaking of tortillas, these remain the taco’s very soul, which is why it’s so important to have a great tasting tortilla.  Flour tortillas tend to be the more popular option over corn as they provide better sturdiness and they’re also better if you’re planning on throwing in several messy ingredients. However, corn tortillas typically provide an overall better flavor.  They’re also best used on the same day they are purchased.

You can get very creative about your taco filling and you should totally free your mind of whatever existing filling conventions you may have.  Veggie tacos can be tasty and healthy, you might want to use squash blossoms, zucchini, potatoes, refried black beans, mushrooms, pumpkin, and kale as some of your veggie taco ingredients.  If you prefer meat, consider a griddled steak or maybe some chorizo.  Other great choices include grilled or fried fish tacos or maybe a shrimp taco.

Your Next Tortilla May Be Even Healthier

EasyFoods-logoThe next time you eat a tortilla, it may come with an added benefit: folic acid.  Foods that are made using corn masa flour such as tacos, tamales, and yes, tortillas may soon come with a healthy fortification of folic acid now that the U.S. Food and Drug Administration (FDA) has chosen to allow it.  Folic acid is a synthetic form of folate which is itself a highly beneficial B vitamin.  Folic acid is beneficial in helping prevent severe defects in the brain and spinal cord upon birth, particularly for women that consume it prior to their pregnancy or in the early stages of it.

Foods like tortillas that use corn masa flour are frequently consumed and found in Hispanic households yer birth defects have also remained somewhat high within the community.  It’s believed that these foods may potentially be a reason why due to the FDA’s ban on fortification of products made with corn masa flour.  The reason behind the FDA’s ban was the concern that the folic acid may not remain stable.  After extensive scientific research, testing, and trials, it was found that the heat and production process does not significantly affect the quantity of folic acid in a fortified product through its shelf life.  Manufacturers are now allowed to add up to 0.7 milligrams of folic acid per pound of corn masa.

Tortilla Style Chicken Tenders

tortilaTenders (1)Go to just about any restaurant and one of the options you’ll find on the menu is chicken tenders. A great meal for adults and children alike, this tried and true dish continues to be a major favorite. Chances are you’ve had chicken tenders at some point, but what if you spice them up with some different ingredients like tortilla chips? Here’s what you’ll need:

  • One and a half pounds of either chicken tenders or boneless breasts sliced into thin strips
  • A cup of flour
  • One and half teaspoon of salt
  • A teaspoon of black pepper
  • About ten ounces of tortilla chips
  • A tablespoon of hot sauce
  • Three to four eggs
  • Half a teaspoon of chili powder
  • Peanut oil to deep fry the tenders

Begin by preheating the oil to 350 degrees Fahrenheit then season the chicken with half a teaspoon of salt and black pepper. Pour the flour into a shallow bowl and mix in the half teaspoon of salt.

Put the eggs into another bowl and add three tablespoons of water, hot sauce, chili powder, and a half teaspoon of salt. Mix everything with a fork until it’s blended well enough.

Use either your hands or a food processor to crush the tortilla chips and then spread them out on either a plate or another bowl separate from the two you’ve already used.

Now it’s time for the chicken. Dredge it into the flour then into the eggs, ensuring that you get rid of any excess. After the flour and the eggs dip the tenders into the tortilla chips, applying enough pressure so that the chips stick to the chicken.

Fry the chicken in batches to prevent them from sticking to one another for about four to five minutes until they’re golden brown and you’re now ready to serve some delicious and unique chicken tenders!
