There may come a moment where you end with some leftover tortillas that you purchased for dinner or as a last minute ingredient for those guests you weren’t expecting. You don’t necessarily need to throw these tortillas out; you can use them to make a quick snack called Peor es Nada which amusingly translates to “Worse is Nothing”. It’s perfect for lunch for two people or just about any time of day when time is limited, here’s what you’ll need:
- Six corn tortillas cut into triangle slices of six or eight
- Hot sauce (whichever you consider your favorite)
- Half of a small, chopped onion
- Salt and pepper for the taste
- Three eggs
- Two butter pats
Grab a skillet and add the butter and onions, sweating them over low-medium heat until tender and then remove them. Turn up the heat to medium and add the tortillas, seasoning them with the salt and pepper and then frying them until they’re brown and a tad crispy.
Beat two eggs and also season them with the salt and pepper before pouring them into the pan. Mix everything together and continue stirring until the eggs have been cooked to your preference. Move the mixture over to a plate, throw in some hot sauce and you’re ready to enjoy!
