    Enjoy These Spring Tacos Before the Season Is Over

    Summer is soon to arrive, why not enjoy some spring potato tacos? They taste great regardless of whether you choose flour or corn tortillas and they’ll take fewer than thirty minutes to prepare. Let’s get started.

    • Five scallions or a trio of spring onions
    • Lime wedges, salsa, and sliced jalapeño to serve
    • Three tablespoons of olive oil (extra virgin)
    • Half a cup of crumbled cotija cheese (five ounces)
    • Kosher salt
    • Eight small flour or corn tortillas
    • A pound of scrubbed red potatoes cut into chunks of half an inch
    • Pair of teaspoons of ground ancho chile

    Begin by trimming the onions and cutting off the white parts from the green stalks. The greens should be thinly sliced while the whites should be diced.

    Use a large nonstick skillet over medium-high heat to heat up the oil. Add the sliced and diced onions and whites and then use salt for seasoning before cooking. Continue to regularly stir until the onions become soft and lightly brown. The process should take about two minutes or so.

    Add the potatoes to the skillet and stir them so they become coated with the oil, then add a pinch of salt plus a sprinkling of ground chile before stirring again and spreading everything into an even layer. Pour half a cup of water in and then cover. Continue to cook and stir one or two times until the potatoes have become brown and tender and the water has evaporated. This should take about ten minutes.

    During this process, use a skillet on medium-low heat to warm up the tortillas for about 45 seconds until they become slightly brown and pliable. Use foil or a clean kitchen towel to stack them.

    Have a taste of the potatoes and add some more salt seasoning if you feel it’s necessary. Divide them among the tortillas you just warmed up and then gently smash the potatoes. Use the cheese and sliced spring onion greens to sprinkle on the tortillas followed by the jalapeño slices and salsa as a topping. You can also squeeze some lime juice if you wish.
