Add Some Spinach to Your Tortilla

Spinach a packs a huge punch when it comes to health benefits, from lowering blood pressure to improving bone health and memory. And yet spinach remains one of those foods that isn’t being consumed as often as it should. This spinach and lime chicken enchilada recipe should help change that.

  • Avocado and cilantro
  • A pound of shredded and cooked chicken
  • An eight-ounce package of cream cheese
  • A 4.5 ounce can of diced green chiles
  • Eight large tortillas
  • Pair of tablespoons of lime juice
  • A cup of pepper jack cheese
  • A teaspoon of cumin
  • Two ten-ounce cans of green enchilada sauce
  • Half a teaspoon of chile powder
  • A small, chopped onion
  • Six cups of baby spinach
  • Three minced garlic cloves
  • Six cups of baby spinach

Combine the chile powder, cooked chicken, cumin, green chiles, and the lime juice in an airtight container or a Ziploc bag that’s gallon-sized. Let the ingredients marinate in the fridge for a minimum of an hour, but preferably a couple of hours.

Saute the garlic and onion in a large skillet for a couple of minutes on low setting until the onion softens. Follow by adding the spinach leaves and saute them until they become wilted. Remove from the heat and combine these ingredients with the chicken.

Preheat the oven to 375 degrees Fahrenheit and then spread a can of green enchilada on the bottom of a 9×13 pan. Add a tablespoon of pepper jack cheese and 1/3 cup of the chicken mixture to a tortilla, roll it up, and then place it with the seam side down in the oven. Repeat the process for the rest of the tortillas.

Heat a can of green enchilada sauce and the cream cheese in a skillet on low setting and mix them together until the cream cheese has melted. Pour on top of the enchiladas and then sprinkle any cheese that’s left on top.

Bake for about twenty minutes or until the sauce begins to bubble up from the bottom. Use the avocado and garlic for garnish and you’re ready to serve.

    St. Patrick’s Day Tacos

    St. Patrick’s Day is this weekend, which means lots of celebrating and potentially, lots of green beer drinking too. If you want to add some festive food to the celebrations, consider this Irish Taco recipe we found.

    • A pound of corned beef
    • Chopped green onions (optional)
    • Eight corn tortillas
    • Russian dressing
    • Eight Swiss cheese slices
    • Sauerkraut
    • A twenty-ounce package of diced potatoes
    • A tablespoon of oil

    Use a twelve-inch skillet over medium heat to warm up the oil. Add the potatoes and then cook for about ten minutes, but do not stir. Flip the potatoes over and cook for another seven minutes or so or until the potatoes become tender. While the potatoes are being prepared, warm up the tortillas in a microwave for about thirty seconds.

    Warm up the corned beef in the microwave until it’s heated through. Add a slice of cheese, two ounces of the meat, and a ¼ cup of potatoes to each tortilla before topping with the green onions (if you chose to use them), dressing, and the sauerkraut.

    Add a Twist of Zucchini

    Are you in the mood for an easy tortilla recipe that won’t take you hours to prepare? The following zucchini tortilla recipe we came across serves two and only take thirty minutes. Let’s get started.

    • An optional tablespoon of minced flat-leaf parsley
    • Three tablespoons of extra virgin olive oil
    • Salt
    • Pair of garlic cloves
    • Four large eggs
    • Pair of zucchini weighing about 1 ¼ pound, cut into thin rounds

    Begin by heating a pair of tablespoons of oil in skillet no more than ten-inches over medium heat. When the oil begins to shimmer, add the garlic and then cook for a minute until it becomes fragrant. Proceed by discarding the garlic. Add the zucchini and then cook for eight minutes or so or until the zucchini becomes tender. Move it over to a bowl.

    Use a mixing bowl to thoroughly beat the eggs and then season them lightly with the salt before adding the parsley, if you chose to use it. Add the zucchini you cooked, making sure to push it down gently into the eggs.

    Using the same skillet over high heat, warm up a tablespoon of oil before pouring the zucchini mixture in. Reduce the heat to low as soon as you pour the mixture in and then swirl the pan for a couple of seconds to ensure the eggs don’t stick. Cook for three minutes until the bottom turns golden and the tortilla has set.

    Safely flip the tortilla over into the pan, swirling it to make sure it sets and doesn’t stick. Tuck any edges down with a spatula and then cook for another two minutes or so until the center is firmly moist.

    What Do You Like in Your Quesadilla?

    A characteristic that makes tortillas such a beloved food is the fact that you can get quite creative with the ingredients you decide to place inside of them. Just about anything that excites the taste buds can go inside, and in this case, we’re sharing a recipe we found that uses a common type of seafood: shrimp. Let’s begin.

    • A cup of shredded, reduced-fat Monterey Jack cheese
    • Half a pound of peeled and cooked shrimp
    • Half a cup of drained tomato salsa
    • Four whole wheat tortillas of eight inches
    • Vegetable oil spray

    Preheat the broiler and then slice the shrimp from one end to the other. Turn the heat to medium and use a nonstick skillet to warm. Use the vegetable oil spray on the skillet and then place a tortilla in the skillet. Spread about half of the salsa on the tortilla before placing half of the shrimp. Put aside a ¼ cup of the shredded cheese, which will be used for sprinkling on each tortilla. Use the rest of the cheese to sprinkle over the shrimp.

    Cover the tortilla with a second tortilla and then place a lid over the skillet. Cook for about two minutes before removing the lid and sprinkling a pair of tablespoons of the cheese you set aside on top of the tortilla. Place the skillet under a broiler for about a minute and then remove it from the oven before transferring the tortilla over to a plate using a spatula.
