Choose Edamame for Your Tortillas

Are you planning a social gathering of sorts? Part of the success will likely involve the food served. Small bites and appetizers are a great way to feed guests if you’d rather not go with something too large that will eat up a lot of your time. Furthermore, if you opt for something without meat you can have some peace of mind that your vegan and vegetarian guests won’t be too turned off.

For an appetizer recipe that just about everyone can enjoy, you may wish to go with edamame quesadillas. The edamame filling should go a long way in satisfying everyone. Usually, these are utilized for foods like a stir fry or salad, but in this scenario, they will make for a delectable alternative to the normal quesadillas filled with meat. You can go with whole wheat tortillas to encase your filling or if you’re the type that likes go with gluten-free foods, flour tortillas can also do the job. Corn tortillas are another option, though you’ll have to ensure that there’s enough oil in the pan with this choice. Whole wheat tortillas can be prepared in a dry pan without having to rely on oil.

For the salsa you intend to use with the edamame quesadilla, tangerines and oranges with a dash of chili and mint will likely require a bit of work, but the result is a mighty fine taste. Your edamame quesadillas will likely be the talk of the town.

Chicken Taquitos for Dinner

How does chicken taquitos with some avocado salsa sound? If it sounds good, check out this recipe we found. You’ll even end up with plenty of salsa to use for any other meal you may be interested in.

  • A pound of rinsed and husked tomatillos
  • Pair of quartered limes
  • About three stemmed serrano chiles
  • Four diced radishes
  • Four unpeeled cloves of garlic
  • Two cups of canola oil
  • A medium, halved avocado with its skin and pit removed
  • Two cups of shredded rotisserie chicken
  • About a handful of fresh cilantro
  • Twelve corn tortillas
  • A teaspoon of kosher salt

Begin by placing the serranos and tomatillos on one side of a rimmed baking sheet that’s been lined with aluminum foil. Place the garlic on the other side and then fold the foil over to cover it. Place your pan on the top rack of your oven and turn the broiler on high setting, cooking until the serranos and tomatillos start to turn black on top which should take about six minutes or so. Flip them over and repeat the process for the other side. Once ready, remove them from your oven and place them aside to cool off.

Once sufficiently cool, start peeling the garlic. Move the serranos, tomatillos, and garlic over to a blender, also adding in the salt, avocado, and cilantro. Blend the ingredients until everything becomes smooth and place it aside.

Use a skillet or griddle over medium heat to warm up the tortilla until it becomes pliant and soft, it should take about fifteen seconds on each side. Move the tortilla over to warmer or use a clean dish towel to cover, repeating the process for the rest of the tortillas.

Place a pair of tablespoons of the chicken on one of the warmed tortillas, seasoning with pepper and salt should it be necessary. Roll up each tortilla tightly, making sure that the seam side down is facing down.

Use a large cast-iron skillet to pour the oil about a half inch deep. Heat it over medium until it begins to shimmer. Place as many tortillas with the seam side down in the oil as you can while making sure they do not crowd. Cook them until they turn golden brown on the bottom, which should take about a minute or two. Flip them over and repeat the process for the other side. Move your taquitos over to a paper towel-lined plate.

Have Some Fun with Your Tortillas

Do you have kids or are you looking for a fun spin on your tortillas? This pinwheel recipe we discovered should prove to be lots of fun to make! Let’s begin.

For the spread

  • Pair of teaspoons of minced chipotle peppers
  • Half a cup of cream cheese
  • A tablespoon of minced fresh chives
  • A tablespoon of fresh orange juice

For the rolls

  • Half a mango cut into strips of ¼ inch wide.
  • Pair of ten-inch flour tortillas
  • Drained bell pepper cut into ¼ inch wide strips
  • A ¼ cup of fresh cilantro leaves
  • Half of a freshly roasted bell pepper

In regards to the spread, begin by using a small bowl to stir together all of the ingredients until the mixture becomes smooth. Give it a taste and adjust the seasoning as you see fit.

For the tortilla rolls, start by spreading each tortilla roll with half of the mixture and then sprinkle them with half of the leaves of cilantro. Beginning about an inch from the tortilla bottom, place a row of bell pepper strips and then a row of mango strips, making sure to stick to the tortilla’s bottom third. Fold the tortilla bottom over the filling and roll it away from you firmly. Use plastic wrap and refrigerate the rolls for a minimum of fifteen minutes.

To create the pinwheels, unwrap the rolls and even out the ends by trimming them. Grab a serrated knife and cut the rolls into eight slices of an inch thick using a sawing motion. When you’re ready to serve, arrange the slices with their cut sides facing down on a platter.

Easy Tortilla Baskets for Six

Tortilla baskets are a fun and easy way to get creative with your meals. Today’s basket we’re highlighting includes delicious tender chicken meat and it takes under an hour to prepare. The recipe below will serve up to six people.

  • Six tortillas
  • One and a half cups of grated mozzarella
  • Ten ounces of cooked and shredded chicken
  • Pair of sliced green chilis
  • Three chopped spring onions
  • 1 ¼ cups of sweet corn
  • Four ounces of halved and quartered cherry tomatoes
  • A cup of salsa sauce
  • Pepper and salt

Grab a cooking pot and fill it halfway with vegetable oil before warming it up over medium heat. Dunk a tortilla into the heated oil and make sure it remains submerged by using a ladle, frying until it becomes golden brown. Once it’s ready to remove from the pot, you should have a fried tortilla basket. Repeat the process for the other five tortillas and place them aside.

Place the salsa sauce, chicken, sweet corn, and spring onion in a bowl and the mix until it becomes even. Use the pepper and salt for seasoning and then stir them in. Evenly distribute the mixture across all six tortillas baskets, topping them off with the tomatoes, the grated mozzarella, and the chili.

Bake the baskets at 350 Fahrenheit for ten minutes and you’re ready to serve.
