Have Some Veggies with Your Tortilla

Tortillas and vegetables are always a good combination, and this pie uses both! Here’s what you’ll need.

  • Either one flour tortilla of ten-inches or three of six-inches
  • Pair of Swiss cheese slices (deli size) cut into strips of a ¼ inch
  • Pair of tablespoons of olive oil
  • Pepper and salt to taste
  • Finely diced medium onion
  • Finely chopped 1/3 cup of parsley
  • Pair of minced garlic cloves
  • A 1/3 cup of diced ham
  • A thinly sliced, medium zucchini or yellow squash
  • A ¼ cup of shredded mozzarella cheese
  • Half of a diced, medium bell pepper
  • Five large eggs
  • A ¼ cup of freshly grated Parmesan cheese
  • Three cups of coarsely chopped fresh spinach

Begin by preheating your oven to 350 degrees and then focus on forming the crust. Use an ungreased pie pan of nine inches to place the tortilla in or if you’re using the smaller tortillas, place one in the center of the pie pan. Slice the other two tortillas in half and drape their halves along the pan sides. Put them aside for now.

Use a medium saute pan to heat the oil. Add the garlic and onion and then saute over medium heat for about three minutes. Follow by adding the bell pepper and zucchini and then cook everything, stirring periodically until the mixture has become tender and golden. The entire process should take about five minutes. Once you’ve done that, stir the spinach in and cook until it becomes wilted. Take the mixture out of the heat and put it aside for now.

Use a large bowl to break the eggs and whisk them well. Add the mozzarella and Parmesan cheese to the bowl as well as the pepper, salt, parsley, and ham, mixing all of the ingredients well. Add the veggie mix to the bowl and stir everything to combine. Pour the filling into the pie pan center and try to avoid any of the mix seeping below the crust. Spread the mix evenly using a spatula. Crisscross the Swiss cheese strips on top of the filling to form a lattice.

Bake for thirty minutes or so or until the pie has turned a light gold. Remove and allow the pie to cool for about ten minutes prior to cutting and serving.

Make Some Famous Quesadillas Tonight

Most people are aware of a certain fast food restaurant with the word “bell” in it that serves food like burritos and more Tex-Mex cuisine. For those that are big fans of its quesadillas, this recipe will show you how to make some that are practically identical.

Sauce ingredients

  • Kosher salt
  • Cup of mayonnaise
  • Three tablespoons of pickled jalapeño juice
  • Half a teaspoon of cayenne
  • Three tablespoons of pickled, minced jalapeños
  • Pair of teaspoons of paprika
  • Pair of teaspoons of garlic powder
  • Pair of teaspoons of cumin

For the quesadillas

  • Eight flour tortillas (medium)
  • Twelve slices of cheddar or American cheese
  • Four cups of shredded chicken
  • Two cups of shredded Monterey Jack

To make the sauce, use a medium bowl to whisk the cayenne, mayo, paprika, jalapeño juice, cumin, minced jalapeños, and the garlic powder. Put that aside temporarily, grab another medium bowl and add the chicken. Toss it with half of the quesadilla sauce and them put it aside to use as dip.

Grab a large skillet, turn up the heat to medium-high, and add a flour tortilla. Top with a pair of slices of the cheddar or American cheese and half a cup of chicken, then use a half cup sprinkling of Monterey Jack cheese. Place a second tortilla on top of the first one and cook until the bottom tortilla turns golden, it should take about two minutes or so. Flip the tortillas over, repeat the process for the second tortilla, and make sure the cheese has melted.

Continue to cook the rest of the tortillas so that you end up with a total of three quesadillas. Slice them into wedges and serve them warm with whatever sauce is left.
