We’ve Been Named a Florida Company to Watch

In case you missed the news earlier this month, we are excited and extremely proud to share that Easy Foods, Inc. made the list of 2018 Florida Companies to Watch honorees!

Florida Companies to Watch is a celebration of emerging second-stage companies with headquarters in Florida, as the name implies. Companies to Watch is a project by the Edward Lowe Foundation which sought a distinct way to recognize and honor second-stage companies that show high performance in the marketplace with forward-looking strategies and processes, making them “worth watching.” Presented by GrowFL, in association with Edward Lowe Foundation, Florida Companies to Watch is an awards program unlike any other.

Some of the factors used to determine the honorees include the company management team, its community involvement, and the company’s competitive market position. A Seafood Quesadilla Spin

When you’re thinking about having quesadillas, seafood probably isn’t one of the top go-to ingredients in terms of the filling. And yet, these shrimp and black bean quesadillas devised by chef Jamie Oliver are definitely a refreshing spin on a tried and true dish. Do you like to eat fish? I adore seafood, and during my time I would even go so far as to say that I have had the good fortune to sample the best seafood in san francisco! There is just something about a good seafood restaurant that keeps people coming back for more… Anyway, let’s take a look at what you’ll need for this exciting recipe!

  • Eight ounces of shrimp (peeled, deveined, large, and frozen)
  • About six corn tortillas
  • A teaspoon of Spanish smoked paprika
  • Half of a jalapeño pepper
  • A tablespoon of vegetable oil
  • A fifteen-ounce can of black beans (no salt added)
  • Two-ounce Parmigiano-Reggiano cheese chunk
  • Three tablespoons of sour cream

Use a microwave-safe bowl to place the shrimp and then cover it with a paper towel. Defrost it in thirty-second increments until the shrimp is no longer frozen but is still cold. Peel the shrimp shells and tails for use with a future broth or throw them out if you prefer.

Using a large nonstick skillet, toss the smoked paprika and shrimp and a teaspoon of the oil, making sure to stir until everything is coated evenly. Cook for about a minute or so over medium heat or until the mixture is nearly opaque.

Move the shrimp over to a cutting board and cut each one in half lengthwise.

Grab another bowl and put the sour cream in it before grating the cheese into the bowl and stirring the sour cream and cheese together. Make sure the black beans are drained and rinsed before adding them to the bowl. Follow by finely chopping the jalapeño and stirring everything together, including the sour cream and cheese mix.

Use a damp paper towel to wrap up the tortillas and microwave them on high for about ten seconds. When ready, lay about five of them on a cutting board and evenly spread the sour cream mixture you just made among each one followed by the shrimp. Fold over the quesadilla to “seal” it.

Using the same skillet you used for the shrimp, heat a teaspoon of the oil over medium heat. Once it begins to shimmer, transfer a pair or so of the tortillas into the skillet and cook for two minutes until they become lightly brown on the bottom. Flip them over and cook for another minute or two. Repeat the process for the rest of the remaining tortillas/quesadillas.

With a reputation for being one of the most beloved foods among people from all walks of life, there is little to no chance of going wrong with a taco. If you’d rather not make one, there are several different spots throughout South Florida where you can enjoy the fine taste of a tortilla wrapped delight.

La Pollita is a taco food truck in the Miami Design District with a pair of Michelin chefs preparing its menu. The tacos are known for their affordability while also being made from fresh, deliciously pliable corn tortillas. With experience directly from Mexico, it’s quite close to authentic.

Despite being seemingly ubiquitous, there is a lot of work that goes into making a genuine, delicious taco. Each individual ingredient needs to be carefully prepared for the best taste, and that’s one area where the appropriately named Viva Mexico in Miami takes exceptional pride. If the amazing tacos don’t satisfy your palate, you want to give the “gordita” a shot.

Taqueria Morelia in the downtown area of Miami is all about the relaxed ambiance in a setting that offers booth dining and an extensive menu with huge plates. If you’re starving and aren’t in the mood to share your food with others, this is definitely the place. You may want to try the carne asada taco when you visit.

Easy Carnitas for Dinner

Tacos (or in this case carnitas) are fun to make, but no one wants to spend too much time making them, especially after a long day. Thankfully the following carnitas require just the tortillas, some salt, and a trio of ingredients to prepare. Here we go!

  • Kosher salt
  • Three and a half pounds of pork shoulder
  • One and a half teaspoons of chili powder
  • Half of a large, medium-fine cut and diced onion
  • Corn tortillas

Should the pork shoulder you’re using have a bone, cut the meat around it carefully. Cube it into pieces of roughly two-inches and then place in a deep pot with a heavy bottom. Pour in some water, but only enough to cover up the pork. Once that’s done, stir in a pair of teaspoons of salt.

Allow the pork to boil and then bring it down to a simmer, allowing it to remain simmering for about an hour and a half. Make sure to regularly check the pork for tenderness. Should it not be tender, add some more water (a cup or so) and continue simmering swiftly until tenderness has been achieved and there is no more water.

Once ready, take the pork out of the bowl and leave any fat behind in the pot under medium heat. Add the chili powder, onion, and a pinch of salt and then stir everything, allowing the onion moisture to loosen up the pork bits.

When the onions have become translucent, place the pork back in and stir, you may wish to allow everything to brown a bit. When the mixture has become cool, taste it to make sure the right amount of salt has been added.

Use warm tortillas to serve the carnitas and top them with some cilantro, pickled onions, and lime juice if you wish.

Announcing Our New Kissimmee Location

In case you missed the big news, Easy Foods Incorporated has expanded its operations! We recently unveiled our brand new, state-of-the-art facility based in Kissimmee, Florida. This new facility spans a whopping 100,000 square feet representing a major expansion for us and setting us up to become Florida’s largest privately owned tortilla company.

Our Easy Foods facility is rail-served, it has received Safe Quality Food (SQF) certification, and we are proud to say it currently employs 150 talented individuals. We are estimating that we will increase this employee count to a total of 250 individuals during the next three years, with an eventual goal of having a total of 350 employees in six years.

In contrast to many tortilla manufacturers in the industry that typically use corn flour for their tortillas, we utilize a corn cooking system which involves grinding down the corn to create nixtamal, an essential ingredient used to create the genuine tortillas we continue to perfect. Presently, the facility is capable of creating about 10 million pounds of tortillas on a monthly basis though we are currently working towards increasing that number to a maximum monthly capacity of 16 million pounds.

At Easy Foods, we remain committed to success and growth. Our sales have skyrocketed by 37% percent compared to last year, representing nearly ten percent in industry growth.
