Easy Green Tacos for Breakfast

With breakfast tacos, there is always a different way to prepare them and get creative. The one we’ll be taking a look at today uses ingredients like cilantro, salsa verde, and avocado. Let’s get started with the ingredients.

  • Four salted eggs cooked to your preference
  • Sour cream
  • A 1/3 cup of grated colby jack cheese
  • Pair of tablespoons of chopped cilantro
  • Four warmed, small tortillas
  • A sliced avocado half
  • Pair of tablespoons of salsa verde
  • Sliced grape tomatoes (optional)

To make the tacos, evenly divide the eggs you cooked between each of the tortillas. Use a sprinkling of the cheese on each one and then follow with a spoonful of the salsa verde. Top the four tortillas with cilantro, avocado slices, and the grape tomatoes if you decided to use them and then use the sour cream for serving. You’re ready to serve about two to four people. Burn Your Mouth with These Super Spicy Burritos

If you’re the kind of person who can’t resist spicy food, then you better try out this recipe. This recipe for extra-spicy burritos uses jalapenos, green chilis, and hot sauce. If that’s not enough for you, just keep adding more hot sauce or peppers until you can’t feel your mouth anymore. Enjoy your spicy burritos and remember to have lots of milk on hand!

Ingredients:

  • 6 ounces jalapeno peppers
  • 1 diced tomato
  • 1 (4 ounce) can of green chili peppers
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1 ½ tablespoons hot sauce
  • ¼ teaspoon ground cayenne pepper
  • 1 lb ground beef
  • 1 (1 ounce) package burrito seasoning
  • 1 (14 ounce) can refried beans
  • 6 (10 inch) flour tortillas
  • 1 (10 ounce) bag of shredded lettuce
  • 1 (8 ounce) container of sour cream
  • 1 (8 ounce) package of cheddar cheese

Instructions:

  1. Mix all the peppers, the tomato, the onion, hot sauce, and cayenne pepper together.
  2. Cook beef over medium-high heat for about 5 minutes. Drain excess grease. Add jalapeno pepper mixture and burrito seasoning; cook, covered, stirring occasionally for 10 minutes.
  3. Heat up refried beans into a saucepan over medium-low heat. Cook and stir until heated through, about 5 minutes.
  4. Microwave each tortilla until soft, 15 to 20 seconds. Spread a layer of refried beans on top. Divide beef mixture among tortillas. Top with lettuce, sour cream, and Cheddar cheese. Fold in opposing edges of each tortilla and roll up into a burrito.

Soup + Tortilla = Delicious

You might think that tortillas and soup don’t go together, but they can. If you want to try using your tortillas in a new and fun way, try this creative recipe! Ingredients

  • 1 4-pound chicken
  • 1 onion, quartered
  • 1 carrot, peeled, chopped
  • 5 garlic cloves, smashed
  • 2 dried chipotle chiles
  • 1 jalapeño (with seeds), halved lengthwise
  • 7 cilantro sprigs
  • 3 tablespoons (or more) fresh lime juice
  • Kosher salt and freshly ground black pepper
  • Vegetable oil (for frying)
  • 5 corn tortillas, cut in 1/2″-thick strips
  • 2 ears of husked corn, or 2 cups frozen, thawed corn kernels
  • Chopped fresh cilantro, halved cherry tomatoes, avocado wedges, queso fresco or mild feta

 

Special Equipment

  • Deep-fry thermometer

Boil the chicken, onion, carrot, garlic, chipotles, jalapeno, and 16 cups of water together, then skim the foam from the top. Simmer for an hour until the chicken is cooked through. Once the chicken is done, shred the chicken meat and set aside. Strain the broth and add more chiles if you want a spicier flavor. Simmer the broth for about an hour, then stir in 3 teaspoons of lime juice and season with salt and pepper. Put the chicken back in.

Next, pour vegetable oil in a skillet until the oil is one inch deep. Heat it up until your deep fry thermometer says 350 or 360 degrees Fahrenheit. Fry the tortilla strips for about 2-3 minutes each. Drain them and season with salt.

Cook the corn with a gas flame or under a broiler until it is charred in spots. Cut kernels and discard the cobs. If you don’t have corn on the cob, then cook the kernels in a skillet until it’s charred in spots.

Rewarm the soup, and top it with corn, tortilla strips, cilantro, avocado, tomatoes, and crumbled queso fresco.

From Tortilla to Crisp

Tortillas are a versatile food. You can make wraps, burritos, taquitos, and lots of other stuff with them. But this next recipe transforms tortillas into something really unique – tortilla crisps. If you’ve got too many leftover tortillas, or you just want to try something new, then make tortilla crisps. The steps are simple, and the result will be delicious!

Ingredients

  • 4 8-inch flour tortillas, cut into 2-inch strips
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 teaspoon sesame seeds
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Kosher salt and black pepper
  • Hummus and paprika, for serving

Instructions:

First, Preheat oven to 425° F. While the oven is warming up, start tossing the tortilla strips with oil, sesame seeds, thyme, oregano, and ½ teaspoon each of salt and pepper. Then put them on rimmed baking sheets and put them in the oven. About halfway through, switch the rimmed baking sheets so the crisps get the right amount of heat. Take them out after around 5-7 minutes. You can eat your crisps with hummus sprinkled with paprika.

For today’s purposes, let’s take a look at the ingredients to make a version involving cilantro, avocado, and salsa verde.

An Unconventional Tortilla Recipe

If you’ve ever wanted to get creative with your tortillas, then this is the perfect recipe to try out. You can make these sugary dessert nachos quickly, and they’ll be a perfect snack no matter what occasion it is.

Ingredients

  • 3/4 c. sugar
  • 4 tsp cinnamon
  • 8 tortillas
  • 6 Tbsp butter melted
  • 8 tsp Cinnamon Sugar
  • 1 c. strawberries chopped
  • 1 banana sliced
  • 1 c. ice cream
  • 2 Tbsp chocolate syrup
  • 2 Tbsp caramel ice cream topping

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly brush one side of each tortilla with melted butter. Sprinkle 1 tsp of cinnamon sugar over each tortilla. Use pizza cutter to cut each tortilla into wedges. Place on ungreased cookie sheet sugar side up. Bake 10-12 minutes or until puffed up and just turning golden brown. Remove from oven and let cool.
  3. Arrange cooled cinnamon chips on a plate. Top with ice cream, strawberries, banana, chocolate syrup and caramel ice cream topping.

Feeding the Poor, One Burrito at a Time

How’s this for a burrito recipe? Fifty pounds of beans and rice, two cases of canned tomatoes and a few hundred tortillas. While this may seem more than excessive for one person, it’s not for Jimmy Ryan, an organizer of the Burrito Project in San Francisco.

This is an informal charity that makes and distributes burritos to the homeless on the last Monday of every month. They have been doing this since May of 2016. Ryan says it is more efficient and delicious to serve burritos than open a typical soup kitchen. “With burritos, you just grab and go” he says. “Just pack protein and some vegetables in there and they’re ready to eat.” The Burrito Project is not the only charitable endeavor of its kind; many copycats have been established in places from Los Angeles, Salt Lake City, Florida, and even the province of Quebec. San Francisco, known for being quite a foodie town as well as having an unrelenting homeless population due to skyrocketing housing costs, seems to be the fitting place for burritos to provide a warm meal.

Easy Taquitos for the Fourth of July

They may go by different names such as “taquitos” depending on whom you ask, but the fact of the matter is that those small rolled up tacos perhaps best known as flautas are a dish that’s easy to make, tastes great, and won’t take up too much of your time. In fact, if you or someone you know has been watching the World Cup competition currently going on, you may have had some of these taquitos as a celebratory treat if your team won! Even if you aren’t paying any attention whatsoever to the World Cup, we’ll share how to easily prepare these tasty treats. Here is what you’ll need:

  • Pair of cups of filling (beans, cooked and chopped meat are great options)
  • Cooking spray
  • Half a cup of shredded cheese
  • Flour tortillas
  • Pepper and salt
  • Optional ingredients: a ¼ cup of sour cream, garlic powder, other spices

Begin by heating your oven to 400 degrees. While it’s heating up, use a medium bowl to mix together whatever filling you used with the cheese and the sour cream, if you chose to use it. Season the mixture with pepper and salt, the optional garlic powder, or another spice mixture. Grab a small spoonful of the mix and place it inside of the tortilla, making sure to tightly roll it up and placing the seam side facing down on a baking sheet. Repeat these steps for the remaining tortillas and then use the cooking spray. Cook for about twenty minutes, making sure to turn them halfway through.
