- Four salted eggs cooked to your preference
- Sour cream
- A 1/3 cup of grated colby jack cheese
- Pair of tablespoons of chopped cilantro
- Four warmed, small tortillas
- A sliced avocado half
- Pair of tablespoons of salsa verde
- Sliced grape tomatoes (optional)
To make the tacos, evenly divide the eggs you cooked between each of the tortillas. Use a sprinkling of the cheese on each one and then follow with a spoonful of the salsa verde. Top the four tortillas with cilantro, avocado slices, and the grape tomatoes if you decided to use them and then use the sour cream for serving. You’re ready to serve about two to four people.
