Happy early St. Patrick’s Day! In keeping with the theme of the day, we’re showing you how to make a tasty spin on a longtime favorite: quesadillas. Without further ado, let’s get started on how to prepare shepherd’s pie quesadillas.
- A pair of large, peeled Yukon Gold potatoes
- One cup of shredded cheddar cheese
- Four tablespoons of butter
- Four tortillas (eight inches)
- Half a cup of milk
- A tablespoon of tomato paste
- Pepper and salt
- Half a pound of ground beef
- A tablespoon of olive oil
- A pair of tablespoons of Worcestershire sauce
- Half of a peeled and chopped onion
- Two peeled and chopped carrots
Begin by cutting the potatoes into one or two-inch chunks and then place them in a water-filled, medium pot before boiling. Allow the potatoes to simmer until they become tender which should take about fifteen minutes or so. Drain and then return the potatoes to the pot. Add the butter and use a potato masher on the potatoes before adding the milk and resuming mashing. Use the pepper and salt for seasoning and set it aside.
Use a large deep skillet to heat the olive oil over medium-high heat. Add the carrots and onions and saute until the latter becomes tender, it should take about five minutes. Follow by adding the beef and Worcestershire sauce and then stir until the beef becomes brown and is properly cooked through. Stir the tomato paste in and continue stirring for another minute or so.
Lay all four of the tortillas on a surface, making sure to divide the mashed potatoes evenly among each one so that they cover the surface of the tortilla. Also, divide the mixture of beef and spread along the tortilla edges. Sprinkle the tortillas with cheese and then top with another tortilla.
Grab a clean, large skillet and heat it over medium-high heat. Place each quesadilla one at a time into the skillet and brown them on both sides, making sure to flip them carefully. Once all of the tortillas are browned, use a pizza cutter to cut them into wedges and you’re ready to serve.
