The purpose behind this is to ensure that the tortillas do not break when you’re eating them. However, you can upgrade your taco taste by tweaking the method in which you warm the tortilla.
It’s all matter of setting your gas range to medium or medium-low heat and then placing the tortilla directly on the burner, regardless of whether it’s a flour or corn tortilla. This step will improve the tortilla’s flavor by lightly browning bits and pieces of it which in turn will improve the taste of your taco. This simple step will still ensure that your tortilla remains pliable enough so that it does not break or fall apart when you’re in the middle of enjoying the taco.
Feel free to turn on more than one burner and experiment with the tortilla to find what works for you, just make sure to use tongs to move them around. If you don’t have a gas burner, you can grab a sheet tray, place the tortillas on it, and broil for a minute or two on each side until the tortillas are browned. A cast iron skillet over medium flame will also do the trick.
