Mix together the olive oil, masa, and salt by hand. As you’re mixing, pour the water in small streams, just enough to ensure the dough stays together without becoming too sticky or dry. Once you’re ready, roll the dough into balls of about two inches and cover them with a damp towel until it’s time to press them.
Grab one of the dough balls and place it in between a pair of wax paper sheets before placing it into the press, making sure to turn the dough into a flat, round tortilla. Keep the tortilla covered with a damp towel until it’s time to cook.
Using a cast iron skillet over medium-high heat, cook the tortillas in a dry pan for about 30 seconds on each side until it’s golden and evenly browned or blackened. To ensure they remain warm and tender, use a kitchen towel wrapped basket.
