Turkey Tacos for Super Bowl Sunday

The Super Bowl is this Sunday! If you’re still thinking about food ideas for your guests, you can’t go wrong with tacos. Assuming there won’t be any vegetarians in your guest list, we think you’ll like this quick, easy, and tasty Salsa Turkey Taco recipe. Here’s what you’ll need:

  • Two teaspoons of olive oil
  • One peeled, pitted, and diced avocado
  • A pound of ground turkey
  • A cup of shredded cheddar cheese
  • An eight-ounce jar of mild salsa
  • Eight soft corn tortillas

Begin with a medium skillet over medium-high heat and add the olive oil. Follow with adding the turkey, making sure to break it up into small pieces with a wooden spoon. Use some salt and pepper for seasoning and then cook until the turkey is golden brown, about five to seven minutes or so. Turn down the heat to medium, throw in the salsa and allow it to simmer for five additional minutes.

For the tortillas, preheat a griddle on medium-high heat, place the tortillas in it and char them up on both sides. This process should take about two or three minutes.

Once you’re ready to make the taco, all you need to do is spoon the turkey into the charred tortilla, sprinkle some of the cheese and then garnish it with the avocado. You’re ready to serve and watch the Patriots take on the Falcons!

Mini-Sized Chicken Tacos

Depending on how you like your taco, eating them could become a little messy if they’re packed with ingredients. With this chicken taco recipe, you can enjoy this food staple in a fun mini size that’s perfect for sharing. Here is what you’ll need:

  • Seven flour tortillas
  • Guacamole
  • Two tablespoons of melted butter
  • Sour cream
  • A shredded rotisserie chicken
  • Three-cheese Mexican blend
  • 1 ½ cup of salsa

Begin by preheating your oven to 375 degrees Fahrenheit. Use the butter to gently brush it onto both sides of the tortilla. Grab either a mason jar lid or circular cookie cutter and cut the tortillas into several small circles. Using a 12-cup muffin tin, flip it over and place the cut-out piece of tortilla in the space between two cups, to create a mini taco shape. One muffin tin should allow for about 17 mini tacos.

Bake the tortillas for five to eight minutes or until they’re golden brown and crispy, this will obviously vary based on your oven. Keep an eye on them to ensure they don’t burn.

Assuming you shredded the chicken and removed the bone and skin, place it in a large pan over medium-high heat and throw in some salsa. Continue to stir until everything is well combined. Once this step is done, you’re ready to serve your mini tacos along with your favorite toppings!

Our corn tortillas use the freshest corn, and we are among the few manufacturers that utilize fresh corn to make nixtamal right on the Easy Foods premises. After cooking the corn, it’s ground down and then used to create a distinctive yet authentic corn flavor in our tortillas.

Make Your Own Corn Tortillas

We’ve talked a lot about various recipes you can make involving delicious tortillas, but we can’t forget to take into consideration those of us that just want to learn the basics. If you’ve never tried making your own corn tortillas, we have a very simple recipe you can follow that requires minimal ingredients so you can start creating your own delicious foods and desserts. Here is what you’ll need to make twelve of them:

  • Two cups of masa
  • Just a pinch of salt
  • Two cups of water
  • Two tablespoons of olive oil
  • A tortilla press

Mix together the olive oil, masa, and salt by hand. As you’re mixing, pour the water in small streams, just enough to ensure the dough stays together without becoming too sticky or dry. Once you’re ready, roll the dough into balls of about two inches and cover them with a damp towel until it’s time to press them.

Grab one of the dough balls and place it in between a pair of wax paper sheets before placing it into the press, making sure to turn the dough into a flat, round tortilla. Keep the tortilla covered with a damp towel until it’s time to cook.

Using a cast iron skillet over medium-high heat, cook the tortillas in a dry pan for about 30 seconds on each side until it’s golden and evenly browned or blackened. To ensure they remain warm and tender, use a kitchen towel wrapped basket.

Quesadilla Appetizers for All of Your Guests

When you’re hosting a get-together, the food you serve will factor heavily into the gathering. You can’t go wrong with serving appetizers and small bites if you’d rather not serve anything too large and time consuming. What’s more, if it’s meatless, this will also go a long way in appeasing any of your vegan or vegetarian guests.

To satisfy just about of all of your guests with a good appetizer, consider edamame quesadillas. Specifically, it’s the filling that will consist of edamame. Typically these are used for salads and stir-fries, but in this case, they will provide a tasty alternative to the standard meat-filled quesadillas. You can use whole wheat tortillas to encase your filling or if you prefer to stick to gluten free, flour tortillas can also work. Corn tortillas are another option, though you’ll need to make sure there’s sufficient oil in the pan. Whole wheat tortillas can be prepared with no oil in a dry pan.

For the edamame quesadilla salsa, tangerines and oranges with a dash of chile and mint might take some work, but the result tastes great. Your edamame quesadillas will be a huge hit!
