The three-day Memorial Day weekend is upon us which means thousands, if not millions of Americans will be firing up the grill to prepare some great food and enjoy the extra days off. Just about any meal can be made better by including some tortillas, and we’ve got a recipe for grilled skirt steak you can prepare should you wish to include them.
For the grilled skirt steak, you’re going to need the following:
- A bunch of scallions with their ends trimmed
- Two pounds of skirt steak cut into four pieces
- One jalapeño or a hot chili pepper
- ¼ cup of fresh, chopped cilantro
- A tablespoon of olive oil
- Two finely chopped tomatoes
- Juice from two limes
- Salt and black pepper
Set your charcoal or gas grill to medium heat and then throw in the jalapeño and scallions with the salt, black pepper, and the olive oil. Grill these ingredients for about six to eight minutes until they’re tender or lightly charred, making sure to turn them often. Put them aside until they’re cool enough to handle.
Once the scallions are ready, chop them up and then core, seed, and chop the jalapeño. Grab a large bowl and combine the tomatoes, cilantro, jalapeño, lime juice, and scallions. You have now made what’s called pico de gallo.
Grill each side of the skirt steak for about five minutes and then let it rest for another five minutes before serving with the pico de gallo. You can also serve the steak by itself or with some warm flour tortillas.
