For the fajitas
- Two and a ¼ pound skirt or flank steak, with the fat trimmed and cut into thirds or pieces of eight inches
- High-quality salsa
- Pepper and salt
- A pair of thinly sliced red bell peppers
- Twelve warmed flour tortillas
- One large thinly sliced onion
- Optional ingredients
- Olive oil
- Shredded cheese
- Lime juice
- Sour cream
For the marinade
- Juice from one orange
- A teaspoon of salt
- Juice from a pair of limes
- A teaspoon of ground cumin
- Olive oil (¼ cup or four tablespoons)
- Three tablespoons of roughly chopped fresh cilantro leaves
- A pair of roughly chopped garlic cloves
- Three adobo sauced chipotle chiles
To prepare the marinade, combine all of the ingredients in a two cup measuring cup then use an immersion blender until marinade puree is smooth. Place the marinade in a resealable bag and add the steak before sealing it and shaking to coat the steak. Allow the beef to refrigerate for at least two hours.
For the steak cooking, drain any excess marinade from the beef and discard it. Use a heated ridged grill pan and lightly oil it. Use a liberal amount of pepper and salt for beef seasoning and grill it over medium-high heat for about four minutes on each side before moving it over to a cutting board. Depending on the grill pan size, it may be necessary to cook the steak in batches.
If you’re using the olive oil and lime juice, mix them up with the bell peppers and onions and grill them for about eight minutes until the veggies become slightly limp.
For the tortillas, turn your free burner to medium-low and place one tortilla on each of the flames for about thirty seconds, allowing each one to char. Remove the tortillas and place them in a towel to keep them warm while you repeat the process for the remaining tortillas. Ensure that all tortillas remain warm and pliable during this step.
To assemble the fajitas, slice the steak thinly. Use the guacamole to spread across the tortilla and top it with the steak, salsa, onions, and peppers. Roll up the tortilla to secure the tortilla and you’re ready to serve.
