In case you’ve missed out on our previous blogs discussing how to make quick and easy chicken quesadillas, today we’re spotlighting one involving green chile and sweet corn pico de gallo. Without further ado, let’s get started with the ingredients.
For the quesadillas
- Monterey Jack cheese (two cups)
- A pair of cups of Tomatillo Sauce by Mi Tierra
- At least eight corn or flour tortillas
- Two cups of shredded chicken
For the pico de gallo
- A cup of cooked corn
- One lime (for the juice)
- A ¼ cup of small and diced red onion
- A ¼ cup of chopped cilantro
- Half of a seeded and diced jalapeño
- Half a cup of diced tomatoes
Begin by combining the Tomatillo Sauce and chicken together and then allowing them to simmer. To make the pico de gallo, combine all of the ingredients.
Once you’re ready to make the quesadillas, heat both sides of a pair of tortillas, allowing the Monterey Jack cheese to melt on one side of them. Add the green chile chicken you made earlier and top it with the other tortilla. Once the cheese has melted, cut the quesadilla into quarters and use the corn pico de gallo as the topping.
You are now ready to serve!
