French toast is a breakfast staple enjoyed by many, but have you ever tried serving it with a twist? Today we’re taking a look at a great Mexican French Toast recipe you can prepare using flour tortillas. Here is what you’ll need:
- Two eggs
- Three tablespoons of confectioners sugar
- Two tablespoons of granulated sugar
- Four tablespoons of divided butter (half a stick)
- A ¼ teaspoon of cinnamon
- Four flour tortillas (ten-inches)
- ¼ teaspoon of vanilla extract
Grab a medium sized bowl and whisk together the granulated sugar, eggs, cinnamon, vanilla, and milk until everything is blended well. Upon completing this step, grab the tortillas and cut them each into quarters before placing them inside the blended mixture. Stir the mixture so that it covers the tortillas completely and then allow the tortillas to soak for about ten minutes or until it’s softened.
Take a large skillet and melt one tablespoon of butter over medium-high heat. Add four tortilla quarters and cook everything for four to five minutes or until the tortillas are golden brown, ensuring that they are turned around halfway through the cooking process. Drain the tortilla on a platter lined with paper towels and then repeat the process for the rest of the tortillas and butter you’ve got left. Lightly sprinkle with the confectioners sugar and you’re ready to serve.
